1 juicy, ripe tomato per person
Olive oil, a good glug
Flaky salt
Black pepper, freshly ground
1 piece of sturdy bread per person
1 clove of garlic (optional)
Chopped parsley to serve (optional)

Pa Amb Tomàquet (bread with tomato) is just that, and that’s all it needs to be. A juicy tomato from your garden (or your Fair Food order), some good olive oil, seasoning and perhaaaaaps some parsley, piled on grilled/toasted bread. We think this traditional Catalan recipe is the simplest, best way to plough through the summer glut!
Pa Amb Tomàquet – Bread with Tomato GF, VG
Start by halving the tomatoes and grating the flesh against the largest holes on a box grater*, compost the skins.
Place grated flesh into a bowl and add a good glug of olive oil, salt and pepper, give it a stir.
Toast or grill your bread.
If you’re using the garlic, slice it in half and gently rub it over each slice of bread (you won’t need much, it’s strong).
Drizzle bread with olive oil, pile the tomato mixture on top and scatter the chopped parsley if using.
Dig in, don’t wait!
*Traditionally this recipe is made by rubbing the cut tomato directly onto the bread which is a speedy, delicious way to go about it!
