2-4 tbsp caster sugar
1 tsp lemon juice
Thyme, a few sprigs, or mint is nice too.
For the cream:
150ml sour cream
150ml heavy cream
1 tsp vanilla extract
Sometimes it’s best to keep things simple. New season organic strawberries, are practically perfect right out of the punnet, but to make them just slightly more delicious we macerate them in a lil bit of sugar and thyme and pile them on top of luscious vanilla cream. Light and lovely, enjoy!
Strawberries and Cream
Wash and halve/quarter the strawberries. Place in shallow dish and sprinkle with 2-3 tbsp sugar and thyme. Drizzle lemon juice over the top and mix it all round to combine. Leave to macerate for an hour or two, stirring occasionally.
For the cream, whisk together all the ingredients until soft peaks form.
In small bowls or glasses, layer strawberries and cream, end with some of the VERY delicious liquid from the macerated strawberries.
Serve at once.
