2x Cocoa Rhapsody Chocolate Dark 72% Premium 90g or equivalent
200g White chocolate
3/4 cup raw nuts or seeds (e.g., almonds, pecans, hazelnuts, pistachios, or pepitas)
1/4 cup dried cranberries or other dried fruit (e.g., cherries, apricots, or candied ginger, chopped if large)
1/2 tsp flaky sea salt (optional)

Evenly spread the melted chocolate in the centre of the baking sheet, about 1/2cm thick.
Sprinkle chopped nuts evenly over the chocolate and follow with the dried fruits. If using flaky salt, crush it between your fingers as you sprinkle. Lightly press the toppings into the chocolate with your palms.
To set the chocolate our ‘Quick Method’ would be to place the baking sheet in the refrigerator for about 15 minutes or traditionally, let cool at room temperature for 2 to 4 hours until completely hardened.
Once hardened, break the bark into pieces and serve immediately or store covered at room temperature for up to 1 week.
