Cauliflower Soup

I found this recipe in the latest Winter Gourmet Traveller. Sometimes people aren’t too excited by cauliflower, and can get a bit stumped. Often it’s in a curry, steamed with cheese sauce or roasted in florets with olive oil and salt. But I tried out this soup and shared it round to much enthusiasm. Cauliflower appreciation was restored. It’s got a lovely mild flavour and is really great with some cheese toasts.
